PRE PREPARATIONS

1. String the French Beans & cut into fine juliennes.

2. Peel and cut madras onions into half

3. Slit and chop the green chillies.

METHOD

1. Heat the oil with the mustard seeds.

2. Add the curry leaves and then the onions.

3. Sauté lightly, now add in the beans.

4. Stir fry on a full flame, moisten with a little water.

5. When beans are done, sprinkle salt and complete the cooking.

STANDARD

Neatly cut beans, fairly thin in shape, must partially retain color. Adequately seasoned and mildly pungent, dry in texture. Served hot.
