| Pulao rice | 7 | Kg |

| Bay leaf | 5 | Gm |

| Peppercorns | 20 | Gm |

| Salt | 100 | Gm |
| |
Pre-preps:
| 1. | Pick, wash, soak and drain rice. |
| 2. | Slice onions finely. Apply salt and keep aside for 10 minutes. Squeeze the water. |
Method:
| 1. | Heat fat and fry onions in hot fat till golden brown. Drain on an absorbent paper. In the same fat, add whole garam masala and reheat slowly. |
| 2. | Add rice and fry well stirring continuously. Add salt and boiling water (twice the quantity of rice). Mix once and cook till done. |
| 3. | Serve hot garnished with fried onions. |
Standard
Just cooked and well-separated grains of rice, garnished with golden fried onion slices. Lightly seasoned and flavoured with garam masala. Served hot.
