begun bhaja

Begun Bhaja No. of Portions – 100

Ingredients Qty Unit

Standard:

A light golden colour , crisp texture., adequately seasoned pieces of brinjal with a distinct flavour of chilli and onion seeds. Served piping hot soon after frying..

Brinjal (Bharta Variety) 5 Kg

Refined Flour 1 Kg

Turmeric 20 Gm

Salt 20 Gm

Red Chilly Powder 20 Gm

Onion Seeds 10 Gm

Oil To fry

Pre-preps:

1. Remove the stem of the brinjal and cut into roundels (1/2 cm thick).

2. Make light gashes on the roundels and apply salt and turmeric powder.

3. Make a thick coating batter with refined flour, salt, turmeric, red chilly powder and onion seeds.

Method:

4. Heat the oil.

5. Dip each roundel in the batter and deep fry.

6. Serve hot.
